  3. Rub the inside cavity of the lamb with about one-third of the spice mixture.
  4. Now comes the fun part: rub the outside skin of the lamb with the remaining spice mixture. Make sure you rub it thoroughly all around.
  5. Let the lamb marinate overnight. The longer you let the lamb sit with the spice rub, the more flavorful it will be.
  6. Preheat your oven to 325°F (or use a spit roaster if you have one). Place the lamb on a roasting rack in a roasting pan.
